Andy's Rest. Scorecard: Chef Felicia Suzanne, plus scores as of 12/28/09

BARTLETT, TN (WMC TV) - Dirty hands and leaky sinks sunk Larry Mays's restaurant twice in December.

Fat Larry's BBQ, 7537 Highway 70, scored a 64 Dec. 14, then another 64 Dec. 28, according to Memphis-Shelby County Health Department inspection records:

* Not enough sanitizer in the final rinse of the dishwasher

* "employee washing dishes, put in dirty dishes into dish machine, remove(d) clean dishes without washing hands after handling dirty dishes"

* "no hand sink in dish machine area for dishwasher to wash hands"

* "waste water leak...leaking onto the floor...repair"

* Inspector wrote "dirty" nine times to describe store conditions

Mays allowed Action News 5 to conduct its own inspection. He does have a hand sink for his employees.  It just isn't right next to the dish-washing machine.

"So they came back and gave me those points back (on re-inspection)," said Mays.

But Mays scored a second 64 because he hadn't repaired a waste water leak on that hand sink. The inspector also discovered another leak, this time under a second hand sink next to Mays's 3-compartment sink for washing food. 

Health officials said the leaks pose safety risks for employees and create breeding conditions for insects.

"I should have spotted it," Mays admitted. "I should have been checking."

Mays sealed the leaks, cleaned the floors, learned his lesson and earned his points. Fat Larry's BBQ rated an 83 on its latest inspection.

Every morsel, every taste of Chef Felicia Suzanne's cuisine is like a journal of her travels and her lifetime of culinary training.

"It's Southern cuisine with influences in the Delta, Creole, Cajun and low-country, local products and then family recipes," said Suzanne.

Family recipes from her hometown Jonesboro, AR.  Low-country flavors from culinary school in Charleston, SC.  Cajun-Creole after eight years in New Orleans. 

Appetizer to main course, those flavors are the star of this show, inside the refurbished 84-year-old building that was once Lowenstein's department store.

Customers also rave about Suzanne's wait staff and her general manager, Steven Shipp.

"They always invite you, very welcoming, and I appreciate that," said Tenley Everette, an East Memphis pharmaceutical rep who treats her clients at Felicia Suzanne's.  "I think that's something that's hard to come by these days."
