THIS WEEK'S BIG TIP:  Josephine Chetter, Server at Patrick's Steaks & Spirits (4972 Park Avenue, East Memphis, 901-682-2852, Mon-Thurs 10:30 - 4:30) and Sweet Grass (937 S. Cooper, Midtown Memphis, 901-278-0278, Fridays 10:30 - 5:00)

Josephine Chetter is a red-hot, red-headed Irish fireball -- the kind of server you want to share your drink with after she serves it.

But she's also gentle, with a kiss and a hug and a tender hand for her customers.

Denise Johnson of Luxora, AR, nominated Chetter for the special attention she showed Johnson and her dying husband when they'd come once a month all the way from Mississippi County, AR, to Memphis for his medical treatment.

"She remembered us -- what we liked to drink, what we liked to eat," said Johnson. "She was always very personable and made us feel at home."

"I mean, it's all about the people being nice when they come in, too," said Chetter in her rich Irish brogue. "It's easy to be nice back!"

Modest, too.

She's also married to Ric Chetter of Rock 103's BadDog & Ric (http://www.rock103.com/pages/crew.html).

"She's a jewel in this city when it comes to this business," said her proud husband. "She's been around for a long time, and a lot of people know her. Everybody loves her to death."
