EAST MEMPHIS (WMC-TV) - At best, achieving perfection on a restaurant inspection is next to impossible.

Achieve it TWICE -- and I might invite you to the casinos.

That's exactly what Bradford Williams and Liz Rizer did when their Curb Side Casseroles, 5130 Wheelis (http://www.curbsidecasseroles.com/), rated its SECOND perfect 100 on its latest health inspection July 14.

"We are so excited!" yelped Rizer. "I can't believe you came by here again. That's awesome!"

The Scorecard's first visit to Curb Side Casseroles was almost exactly a year ago, when our viewers nominated it as The Big Tip of the week for its homemade creations, curb-side convenience and its first perfect 100 (click here for the original Scorecard report on Curb Side Casseroles:  http://www.wmctv.com/Global/story.asp?S=10988953).

A year later, Curb Side Casseroles still works its magic every Tuesday and Thursday, whipping up whole casseroles and dishes for Mid-South moms and dads on the go.

"I like NOT to cook," said Beth Hunsberger of Chickasaw Gardens from her driver's seat in the drive-thru. "And on Tuesdays and Thursdays, I don't cook, but Curb Side Casseroles is!"

Cooking with gas...and clean perfection.  Again!

Things weren't so perfect at the Happy Mexican's new location out east, 6080 Primacy Parkway, when it failed its July 13 inspection with a 67:

"fruit flies throughout food establishment"

"employee did not wash hands upon returning to prep food"

"dirty knives stored on knife rack"

"wastewater leak at base of toilet in ladies room"

Operators Francisco and Larry Gonzalez cordially greeted me outside. They wouldn't do any on-camera interviews or let us conduct a video inspection inside.

But Francisco Gonzalez said, "The wastewater leak in the ladies' room has been fixed. In fact, we've gone down the list of the health inspector's violations, and we've fixed every one of them. We're just waiting for our re-inspection."

A health inspector re-inspected the Happy Mexican July 27. The inspector upgraded the East Memphis location's score to an 85.
