CORDOVA, TN (WMC-TV) - "You know when it's real"...when a health inspector hits your restaurant up for the low score of the week.

Wendy's, 8092 Rockcreek Cv., passed its Sept. 10 inspection by four points with a 73, but the inspector issued the store a permit suspension notice:

"hamburger patties (at potentially hazardous food temp)"

"no splash guard on handsink next to food storage"

mop sink's "back flow device leaks"

"spray bottle of cleaner stored with open bag of sugar" under drive thru hand sink

Wendy's Rockcreek location manager George Kocsis took this inspection personally. When we called him for comment, he already had a Memphis-Shelby County health inspector back out to talk things over.

"I only manage the cleanest Wendy's in the area," Kocsis said on the phone -- never mind the fact that the Wendy's on Union Avenue has received the highest inspection scores of any Shelby County Wendy's so far this year (click here for our Scorecard report on that Wendy's: http://www.wmctv.com/Global/story.asp?S=12850219).

"You're going to have to talk to Valenti Management," he added.

Valenti Mid-South Management (www.valentirestaurants.com) owns and operates 42 Wendy's restaurants in West Tennessee, including the Rockcreek Cv. location.

Director of Operations John Carlasare is always good to talk to us, pro or con, but his office told us he's on a company retreat and could not be reached for comment.

Memphis-Shelby County Environmentalist/Health Inspector Vivian Mormon said an inspector found more hamburger patties at unsafe temperatures on the re-inspection this week. She said that means the Rockcreek Wendy's will keep its 73 score for now.

THIS WEEK'S BIG TIP:  Fork It Over Catering & Gourmet Market, 2299 Young Avenue, Midtown Memphis, (901) 278-0028, http://www.forkitovercatering.com/.

Four new entrees a week.

Six new side-dishes a week.

Catering on a small or large scale -- from your Saturday night dinner party to food service at Memphis Botanic Garden.

An innovative business model -- and a perfect health inspection score (100) Sept. 8 -- make Michelle Campbell's Fork It Over Catering & Gourmet Market this week's Big Tip.

"We create new menus every week," said Campbell. "We e-mail them to our regular customers or anyone else who wants to be added on to the list, and then they pre-order, and then the next week on Tuesday, they can pick it up or we'll deliver."

Campbell also offers a daily deli menu for pick up only (http://www.forkitovercatering.com/index.php/lunch_menu/). It includes a delicious muffaletta sandwich, paninis (on the freshest foccacia bread) and wraps.

"This is not just any sandwich," said customer Trey Carter of Whitehaven, polishing off the muffaletta with Campbell's homemade olive mix. "Their sandwiches are loaded!"

Customers can load up on jars of homemade sauces, relishes and salsas. The freshest veggie sides and Campbell's pleasant personality keep folks coming back.

"Once I tasted the food, I was coming back anyway," said Carter. "But her personality made it just great."
