WHITEHAVEN (WMC-TV) - THIS WEEK'S BIG TIP:  Arnold's BBQ, 4560 Elvis Presley Blvd, Whitehaven, 901-345-5992; original location in Hickory Hill at 6721 E. Shelby Dr., http://arnoldsbarbecue.com/

This week's Big Tip -- is about to get a lot bigger.

Michael Arnold's Whitehaven location earned the highest health inspection score of the week with a 99 on Dec. 29. It's also the restaurant's highest score since it opened three years ago (Arnold opened the original Hickory Hill location 15 years ago).

Now Arnold has announced he plans to add four more Arnold's BBQ locations, but he's keeping the sites a secret.

"Once I get (the Whitehaven location) up and going, then we're going to expand a little further," Arnold said.

Arnold's BBQ serves the standard barbecue fare, plus hot wings and catfish. But what sets Arnold's ribs apart is he smokes them three to five hours in a charcoal pit, mixed with freshly-cut hickory and cherry wood.

"I mix the hickory and cherry together, and that gives the meat that outstanding flavor," he said.

"The way the meat comes off the bone, it simmers real good, and it's seasoned just right," said Whitehaven customer Robert Fleming.

"My daughter, she fell in love with the owners," said Vernell Gregory, another loyal Whitehaven patron. "And the food is excellent!"

WHAT ANDY LIKES:  Ribs, pork sandwich, Arnold's "Sassy Sauce," Fried Catfish

LOW SCORES OF THE WEEK:

Rain Premier Sushi Bar & Bistro, 1250 N. Germantown Parkway in Cordova, TN, rated a 73 with a food permit suspension notice Dec. 29:

Brown Gravy (at unsafe food temp)

Rice (at unsafe food temp)

"dishwasher dirty...no sanitizer dispensed in dishwasher"

"Basically, we had run out of the sanitizer," said Lance Hiller, Rain's maitre d'. "Unfortunately, like anything else, we're human. We make mistakes."

Mistakes aren't exactly Rain's m.o.

Its inspection scores over the last couple of years include 97, 91 and 85.

"We've always had really good scores," Hiller said.

He said Rain's prepared for its re-inspection.

Woodlands Indian Cuisine, 4205 Hacks Cross, Suite 101, in Southeast Memphis scored a 71 with a food permit suspension notice Dec. 29:

"...roach crawling on cutting board"

"no sanitizer present"

"insecticides stored with degreaser"

"insecticide stored with single-service food items"

Employee-in-charge Derence Dias said Woodlands is working with its pest control company on the bug issue. He added that the restaurant fired a distributor for delaying its sanitizer shipment.

"We have changed companies and given the contract to a more reliable company," Dias said. "I will make sure everything goes right the next time."
