Recipe from Candace N. Sakuda of Hawaii
In a bowl, mix the following:
5 large bananas - mashed (about 2 1/2 cups)
3/4 cup granulated sugar
2 tablespoons vegetable (canola) oil
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
Add: One (12 oz.) bottle/can of beer. Let sit for 15 minutes.
Add to above:
2 3/4 cups self rising flour
1/2 bag (12 oz.) of semi-sweet chocolate chips
1 cup chopped walnuts (optional)
Do not over mix. Pour into greased 9 X 12 inch pan. Sprinkle the rest of chocolate chips on top of mixture. Bake at 325 F. for 45 - 50 minutes or until sides come away from pan.
