Fuel Cafe's new Spring/Summer menu is a dedication -- to vegetation.

Healthy vegetarian, vegan and gluten-free options are what helped the little restaurant in a re-purposed gas station (very Project Green Fork-like!) earn its PGF certification.

Don't get me wrong -- you won't have any problem finding the beef at Fuel Cafe. Its Bison Burger has teased many a taste bud among foodies. Fuel Cafe's Bison Chili earned a Top 5 Restaurant Chili Recipe nod on the Scorecard.

But its new menu emphasizes healthy, hearty salads and veggie sandwiches.

"Look, I can't eat it fast enough," said East Memphis customer Linda Pelts, who wolfed down Fuel Cafe's Veggie Burger. "I love it!"

"I really love the Big Vegan Chopped Salad," said Midtown's April Novak. "They have really great vegetables, so not only are they having vegan options, but vegan vegetable options. Healthy vegan food!"

My favorite vegan option:  the fresh vegan spring rolls with a vegan "duck" substitute and a smack-n-pop peanut hoison dip.

What's cool about Fuel Cafe is you can wander off the menu. Its knowledgeable staff will accept custom vegan, veggie or gluten-free orders to fit custom diets.

"We're really accommodating, and so we really have a lot of vegan options...even can do paleo (read: caveman diet) things," said Fuel Cafe's Owner Erik Proveaux. "We try to keep up with trends and what people are aware of."
